This method of spherification involves one extra step within the Basic or Reverse Spherification methods. Here, the liquid that is to be sphered is frozen in hemisphere molds prior to being submerged in the setting bath thus producing a perfect shape.
Pros:
- Produces a precise hemisphere shape every time
Cons:
- Requires more time to freeze the liquid
- Only works with liquids that can freeze. For example, this technique would not work with a highly alcoholic solution.
